Banana Pancakes with Cardamom Orange Sauce
Description Although this is a 3-step recipe, and the result is good enough to grace a dinner party, it is so simple that it can easily be made by a child over about 8 years of age.  A novel and very rewarding pastime for a wet afternoon!

Pancakes:

1½ cups milk
1 egg
1 cup plain flour
butter for cooking

Sauce:

grated rind of 1 orange
½ cup orange juice
1 tablespoon lemon juice
1 tablespoon butter
1 teaspoon Herbie’s Spices Cardamom Seed Green Ground
1/3  cup sugar
¼ cup water

To finish:

3 medium bananas
2 teaspoons Herbie’s Spices Mixed Spice
zest of one lemon
1 teaspoon lemon juice

 

Methods/steps

Pancakes:

  1. To make pancakes, beat milk and egg together then add the flour little by little until you have a smooth, thick batter. 
  2. Heat a flat pan, melt just enough butter to cover the base, and cook the pancake by placing two tablespoons of mixture in the middle of the heated pan and tilting the pan around until the batter has spread thinly. 
  3. After a minute, lift the edge to see if the pancake is browned.  When it is, turn it with a spatula and cook the other side. 
  4. Melt a little more butter and make the next pancake the same way.
  5. Transfer each cooked pancake to a plate and keep warm in the oven at 100ºC until they are all cooked. 

Sauce:

  1. Warm all sauce ingredients together in a saucepan until the butter and sugar have melted. 
  2. Add more sugar or lemon juice to taste and keep warm.

To Finish:

  1. Mash the bananas with a fork with the mixed spice, lemon zest and 1 teaspoon lemon juice and set aside.
  2. Set out a bread-and-butter plate for each person and place a pancake on each plate.
  3. Assemble by spooning some banana onto each pancake and folding it over, then pour some orange sauce over the top. 
  4. Serve with cream or ice cream.
