Balmain Bikies
Description We couldn't resist a little play on words here.  Leatherjacket is a very economical and delicious fish with a strong, leathery skin.  As motorcyclists were leather jackets, we coined the name "Balmain Bikies" for leatherjackets seasoned with our iconic Balmain and Rozelle Spice mix.

1 leatherjacket per person           

spray-on olive oil

½ - 1 teaspoon Herbie’s Spices Balmain & Rozelle Spice per fish

Methods/steps
  1. Make a couple of slashes in the plump sides of the fish with a sharp knife. 
  2. Lightly spray the fish on both sides with oil, then sprinkle the spice blend evenly over both sides. 
  3. Wrap each fish in aluminium foil and place over hot coals on the barbecue griddle. 
  4. Cook for 5 minutes each side then remove from heat, carefully open the foil and test to see if fish separates into flakes when tested with the point of a knife. Cook a few minutes longer if necessary.
Additional Tips
If you're entertaining, these can be prepared in advance and the foil parcels kept in the fridge until needed.
