Baked Herb Ricotta

6 as part of a mezze

500g quality ricotta cheese
2 teaspoons Herbie’s Spices Oregano Leaves
1 teaspoon Herbie’s Spices Marjoram Leaves

1 teaspoon Herbie’s Spices Basil Leaves

2 egg whites
salt and pepper to taste
30g shaved parmesan

Methods/steps
  1. Mix ricotta until smooth and beat in herbs and egg whites, season to taste. 
  2. Pour into a loaf tin, or individual ramekins and bake at 180ºC for 20 minutes. 
  3. Top with parmesan and bake a further 10 minutes. 
  4. Turn out and serve as an entrée with roasted tomatoes or as part of a mezze plate.
