Baked Herb Ricotta

Mix ricotta until smooth and beat in herbs and egg whites, season to taste.
Pour into a loaf tin, or individual ramekins and bake at 180ºC for 20 minutes.
Top with parmesan and bake a further 10 minutes.
Turn out and serve as an entrée with roasted tomatoes or as part of a mezze plate.
