"Olde English" Bread Sauce
Description

Not unlike a white sauce, this bread sauce is a traditional accompaniment for roast chicken.

450mL milk

1 Herbie’s Spices Bay Leaves Whole (Turkish)

4 Herbie’s Spices Cloves Whole

1 Herbie’s Spices Mace Blade Pieces

pinch Herbie’s Spices Nutmeg Ground

5 or 6 Herbie’s Spices Pepper Cubeb Whole

pinch Herbie’s Spices Cayenne Pepper (optional)

½ onion, or 1 small onion, peeled

3 or 4 slices 2 day old white bread, crusts removed to make 1½ cups white breadcrumbs

60mL thickened cream

Herbie’s Spices Pepper White Ground to taste

salt to taste

Methods/steps
  1. Heat milk with spices and onion in a saucepan, and simmer gently for 20 minutes. Remove from heat, and allow flavours to infuse for an hour or so - ‘bruise’ the softened Cubebs for extra flavour.
  2. Strain sauce, removing onion, whole spices, and any skin that has formed.
  3. Reheat gently, add breadcrumbs, stirring 5 minutes or until liquid is absorbed.
  4. Add cream, white pepper and salt to taste. Keep on a low heat 10 mins, stirring occasionally. Serve.
Additional Tips
Sauce can be made in advance and reheated just before serving.
